Asian Fusion Bowl

This tasty and colorful bowl will have your mouth watering. It’s filled with nutritious veggies and an added dose of protein from the shrimp…yum! The recipe is courtesy of @servingupsimplicity.

To make the sauce, blend together:

1/3 cup peanut butter

1/2 cup water

2 tbsp soy sauce

1 tbsp Sriracha

1 tbsp honey

A few shakes of ginger powder (or fresh)

A few shakes of garlic powder (or fresh)

If you want to thicken add a tsp cornstarch and stir on the stove on low until thick.

To make the shrimp:

Season with spices of your choice and saute in oil on medium heat.

For the pasta:

Cook rice noodles and toss with 1/2 portion of the sauce from above, along with carrot ribbons (I used a potato peeler to create the ribbons), and thinly sliced red peppers.

Top with peanuts, cucumber, micro greens, and sesame seeds (all optional).
