Gluten-Free Dinner Recipe: Frozen Potsticker Soup

Soup-er Easy Potsticker Noodle Soup

This classic dumpling noodle soup recipe provides comfort and substance, making it one of our winter staples. Warming ingredients like garlic, ginger, and chili oil draw out umami notes in the soup stock. Rice noodles, a fundamental ingredient in innumerable gluten-free dinner ideas, easily take on the flavors you build in your soup. Green onions, bean sprouts, and spinach bring in ample fiber. Ingredients

1 box of Feel Good Foods frozen potstickers (vegetable, chicken, or pork)
1 pack of rice noodles
6 cups vegetable or chicken stock
2 cups bean sprouts
4 cups fresh spinach
2 garlic cloves, minced
1-inch piece of ginger
1 tablespoon freshly grated ginger
2 green onions, thinly sliced
Salt and pepper to taste
Optional: add some of your favorite chili oil to spice this soup up!

Cooking Instructions

Mince your garlic, grate your ginger, and prepare your 1-inch piece of cut ginger. Bring your stock of choice to a boil, add the garlic and ginger, and let simmer for 5 minutes.

After the stock has simmered, pop open your box of potstickers from Feel Good Foods, and cook them in the broth for 10 minutes.

While your stock heats and simmers and your potstickers are cooking, wash the spinach, thinly slice the green onions, and cook the rice noodles of your choice in a separate bowl.

After your potstickers have cooked in the broth for 10 minutes, add the spinach and bean sprouts, and cook until wilted.

Assemble your bowl by adding your noodles and potstickers, then pour in your broth and veggies. Sprinkle on your sliced green onions, top it off with some of your favorite chili oil for an extra kick, and enjoy!

Thai Red Curry Potsticker Zoodle Soup

This gluten-free dinner recipe shares the same core ingredients as the Soup-er Easy Potsticker Soup, but curry paste, coconut milk, brown sugar, and leafy herbs thicken up the broth and add dimension to this dumpling soup recipe. This gyoza soup celebrates vegetables, with green bell peppers, onions, and spiralized zucchini zoodles serving as the foundation of the meal.

Ingredients

1 box of Feel Good Foods frozen potstickers (vegetable, chicken, or pork)
1 tablespoon olive oil
2 garlic cloves, minced
1 green bell pepper, cut into thin strips
1 onion, diced
3 tablespoons red curry paste
1 tablespoon freshly grated ginger
6 cups vegetable or chicken broth
1 can coconut milk (13.5-ounce)
2 medium-sized zucchini, spiralized into zoodles (can be bought pre-cut in most produce sections)
1 tablespoon brown sugar
4 green onions, thinly sliced
1/2 cup chopped fresh cilantro leaves
1/4 cup chopped fresh basil leaves
1 lime cut into 4 wedges
Salt and pepper to taste

Cooking Instructions

Prepare your vegetables by mincing your garlic, slicing your green bell pepper into thin strips, and dicing your onion. If you did not buy your zucchini pre-cut, you might want to take time before cooking to spiralize the vegetable into zoodles (zucchini noodles). Heat olive oil in a large stockpot or dutch oven over medium heat. Add garlic, bell pepper, and onion to your pot and cook, stirring occasionally, until tender, about 3 to 4 minutes.

Add red curry paste and freshly grated ginger and stir in until fragrant, about 1 minute. Stir in vegetable or chicken broth and coconut milk. Add the spiralized zucchini and brown sugar, and stir in until tender, about 5 minutes.

Pop open your box of potstickers from Feel Good Foods and let them cook in the broth. Bring the broth to a boil, then lower the heat and cook, stirring occasionally, until reduced, about 10 minutes.

Use the time that your soup is reducing to thinly slice your green onions and chop your fresh cilantro and basil leaves.

Season the soup with salt and pepper to taste. Remove from heat; stir in sliced green onions, cilantro, and basil. Plate your zoodle soup, add a squeeze of lime, and slurp away!
