Tryg’s “Simply Mashed Potatoes”

This simple mashed potato recipe is elevated by using a potato ricer. The ricer gives the potatoes a silky, creamy texture bringing this traditional dish to the next level.

Serves: 4-6 people

Preparation Time: 15minutes

Cooking Time: 20 minutes

Special Equipment: Potato Ricer

Ingredients

2 pounds potatoes, peeled and quartered length-wise

1/2 cup heavy cream

2 tablespoons sour cream

4 tablespoons butter

Salt and pepper

2 tablespoons chives, chopped

Preparation

In a pot of water, cook the potatoes over medium-high heat until tender, about 15-20 minutes.

Drain the potatoes and pass through a potato ricer. Transfer potatoes to a mixing bowl.

In a small saucepan heat cream, butter, sour cream, salt and pepper over medium heat, until butter is melted. Pour liquid over potatoes and mix, turning 2-3 times, to incorporate ingredients.

Cooks Note: Do not over mix the potatoes.

Top the potatoes with fresh chives.
