This homemade jalapeño cilantro chimichurri sauce by Jamie of @asassyspoon is just what we needed as we head into the weekend. She paired it with a simple avocado salad atop our vegetable empanadas!
Jalapeño Cilantro Chimichurri:
Remove seeds from 3 jalapeños. In a food processor, add jalapeños, 3 garlic cloves, 2 cups of chopped cilantro, 1/3 cup olive oil, 2 tablespoons of lime juice, and salt to taste. Pulse until desired consistency. Drizzle on empanadas.
Simple Avocado Salad:
In a bowl, whisk 2 tablespoons of lime juice, 2 tablespoons of chopped cilantro, 1 tablespoon of olive oil and salt + pepper to taste. Slice an 1/2 avocado, 1/2 red onion and 1/2 tomato and add it to the bowl. Toss to combine.
